Ansvar offers a unique culinary experience where sustainability and ecology are at the centre.
With a passion for vegetables, legumes and mushrooms, they play the leading role in the restaurant's dishes. Ansvar works with Danish, organic suppliers to ensure that we only use the best seasonal ingredients.
Sustainability is an integral part of Ansvar's concept and can be seen not only on the menu but in all other aspects of the restaurant. The tableware and menu are made from recycled materials and they actively work against food waste by using every part of each ingredient and turning leftovers into puree, stock or dried herb powder. The restaurant offers a 3-course vegan menu and a 6-course vegetable-orientated menu.
